Ingredients:

  • 4 medium ripe tomatoes, sliced (about 1 lb / 450 g)
  • 8 oz fresh mozzarella balls (bocconcini), halved (225 g)
  • 1 cup fresh basil leaves, torn (about 30 g)
  • 2 tablespoons extra virgin olive oil (30 mL)
  • 1 tablespoon balsamic reduction (15 mL)
  • Salt and black pepper, to taste

Instructions:

  1. Slice the tomatoes into rounds. Halve the mozzarella balls. Tear the basil leaves into smaller pieces. Optionally prepare additional garnishes if desired.
  2. In a large mixing bowl, gently combine the sliced tomatoes, mozzarella, and torn basil.
  3. Drizzle the olive oil and balsamic reduction over the salad mixture. Season with salt and black pepper to taste.
  4. Toss gently to combine, taking care not to break the mozzarella. Transfer to a serving platter or bowl.
  5. Enjoy fresh, ideally at room temperature.
