Ingredients:
- 4 medium ripe tomatoes, sliced (about 1 lb / 450 g)
- 8 oz fresh mozzarella balls (bocconcini), halved (225 g)
- 1 cup fresh basil leaves, torn (about 30 g)
- 2 tablespoons extra virgin olive oil (30 mL)
- 1 tablespoon balsamic reduction (15 mL)
- Salt and black pepper, to taste
Instructions:
- Slice the tomatoes into rounds. Halve the mozzarella balls. Tear the basil leaves into smaller pieces. Optionally prepare additional garnishes if desired.
- In a large mixing bowl, gently combine the sliced tomatoes, mozzarella, and torn basil.
- Drizzle the olive oil and balsamic reduction over the salad mixture. Season with salt and black pepper to taste.
- Toss gently to combine, taking care not to break the mozzarella. Transfer to a serving platter or bowl.
- Enjoy fresh, ideally at room temperature.
