Ingredients:
- 3 cups ripe cherry tomatoes, halved
- 1 cup diced cucumber, peeled (optional)
- ¼ cup finely chopped red onion
- ½ cup fresh basil leaves, torn
- ¼ cup fresh parsley, chopped
- ¼ cup feta cheese, crumbled (optional)
- 3 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions:
- Rinse and halve the cherry tomatoes. Dice the cucumber (if using). Finely chop the red onion.
- In a large mixing bowl, combine the tomatoes, cucumber, red onion, basil, parsley, and feta cheese (if using).
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and season with salt and pepper.
- Drizzle the dressing over the salad and gently toss to combine everything evenly.
- Transfer to a serving bowl or platter and enjoy immediately, or let sit for 5 minutes for the flavors to meld.
