Ingredients:

  • 3 cups ripe cherry tomatoes, halved
  • 1 cup diced cucumber, peeled (optional)
  • ¼ cup finely chopped red onion
  • ½ cup fresh basil leaves, torn
  • ¼ cup fresh parsley, chopped
  • ¼ cup feta cheese, crumbled (optional)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions:

  1. Rinse and halve the cherry tomatoes. Dice the cucumber (if using). Finely chop the red onion.
  2. In a large mixing bowl, combine the tomatoes, cucumber, red onion, basil, parsley, and feta cheese (if using).
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and season with salt and pepper.
  4. Drizzle the dressing over the salad and gently toss to combine everything evenly.
  5. Transfer to a serving bowl or platter and enjoy immediately, or let sit for 5 minutes for the flavors to meld.
