Ingredients:

  • 3 cups (450g) English cucumber, diced into ½ inch cubes
  • 2 cups (300g) cherry tomatoes, halved
  • ½ cup (75g) red onion, finely diced
  • ½ cup (60g) crumbled feta cheese
  • ¼ cup (15g) fresh parsley, chopped
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lemon juice
  • 1 clove (5g) garlic, minced
  • 1 tsp (2g) dried oregano
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) black pepper

Instructions:

  1. Dice the cucumbers and halve the tomatoes into uniform pieces. Note: Uniformity ensures every bite has a bit of everything
  2. Finely mince the red onion. Note: Rinse the diced pieces under cold water for 30 seconds and pat dry to reduce the harsh sharpness
  3. Combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small jar.
  4. Shake the jar vigorously for 30 seconds until the mixture is thickened and glossy.
  5. Place the cucumbers, tomatoes, and red onion in a large bowl.
  6. Pour the vinaigrette over the vegetables.
  7. Toss the mixture gently until every piece is thinly coated in oil.
  8. Fold in the crumbled feta and fresh parsley last. Note: Doing this last prevents the cheese from breaking down into a mushy paste
