Ingredients:

  • 2 cups fresh or frozen peas
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh mint leaves, chopped
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic, sauté for 30 seconds until fragrant (watch for browning).
  3. Add the peas; stir to combine and sauté for 3-4 minutes until tender and bright green.
  4. Add fresh lemon juice, chopped mint, salt, and pepper. Stir well.
  5. Cook for an additional minute to warm through.
  6. Remove from heat and serve immediately.
