Ingredients:
- 2 cups fresh or frozen peas
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1/4 cup fresh mint leaves, chopped
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add minced garlic, sauté for 30 seconds until fragrant (watch for browning).
- Add the peas; stir to combine and sauté for 3-4 minutes until tender and bright green.
- Add fresh lemon juice, chopped mint, salt, and pepper. Stir well.
- Cook for an additional minute to warm through.
- Remove from heat and serve immediately.
