Ingredients:

  • 2 lbs fresh apricots, pitted and chopped
  • 1/4 cup fresh lemon juice
  • 1 1/2 cups granulated sugar

Instructions:

  1. Pit the apricots and chop them into small pieces. Place them in a heavy-bottomed saucepan and use a potato masher or immersion blender to crush them to your preferred consistency.
  2. Stir in the lemon juice and granulated sugar. Place the pan over medium-high heat, stirring constantly, until the sugar has completely dissolved.
  3. Increase the heat to high and bring the mixture to a rolling boil. Boil for approximately 8 minutes, stirring frequently to prevent scorching, until the jam thickens and reaches a glossy sheen.
  4. Perform the plate test by placing a small spoonful of jam on a chilled plate for 30 seconds; if the edge wrinkles when pushed with a finger, remove from heat immediately.
