Ingredients:

  • 1 pound (450g) ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cans (15 oz each / 425g) diced tomatoes
  • 1 can (15 oz / 425g) kidney beans, drained and rinsed
  • 2 tablespoons (30ml) chili powder
  • 1 teaspoon (5g) cumin
  • 1 teaspoon (5g) smoked paprika
  • Salt and pepper to taste
  • 1 cup (240ml) vegetable or chicken broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro

Instructions:

  1. Heat the large pot over medium heat; add oil if using meat. Add diced onion and bell pepper, sauté until soft, about 5 minutes. Stir in minced garlic and cook for 1 minute.
  2. Add ground meat to the pot, breaking it up. Cook until browned, about 8-10 minutes. Drain excess fat if necessary.
  3. Stir in diced tomatoes with juice and kidney beans. Mix well.
  4. Add chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine all spices.
  5. Pour in broth, bring to a simmer. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  6. Taste and adjust seasoning as needed. Serve hot with your favorite toppings.
