Ingredients:
- 1 pound (450g) ground beef or turkey
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (15 oz each / 425g) diced tomatoes
- 1 can (15 oz / 425g) kidney beans, drained and rinsed
- 2 tablespoons (30ml) chili powder
- 1 teaspoon (5g) cumin
- 1 teaspoon (5g) smoked paprika
- Salt and pepper to taste
- 1 cup (240ml) vegetable or chicken broth
- Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro
Instructions:
- Heat the large pot over medium heat; add oil if using meat. Add diced onion and bell pepper, sauté until soft, about 5 minutes. Stir in minced garlic and cook for 1 minute.
- Add ground meat to the pot, breaking it up. Cook until browned, about 8-10 minutes. Drain excess fat if necessary.
- Stir in diced tomatoes with juice and kidney beans. Mix well.
- Add chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine all spices.
- Pour in broth, bring to a simmer. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. Serve hot with your favorite toppings.
