Ingredients:
- 1 lb jumbo shrimp, peeled and deveined, tail-on
- 1 tbsp neutral oil
- 2 tbsp extra-virgin olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 tbsp fresh lemon juice
Instructions:
- Pat the shrimp thoroughly with paper towels to remove excess moisture.
- In a large bowl, whisk together the extra-virgin olive oil, minced garlic, smoked paprika, salt, and pepper.
- Add the shrimp to the bowl and toss gently until evenly coated in the marinade.
- Preheat the outdoor grill or indoor grill pan to high heat (approx. 400°F to 450°F).
- Lightly brush the grill grates with neutral oil to prevent sticking.
- Place shrimp on the grill and sear undisturbed for 2–3 minutes until golden-brown.
- Flip the shrimp and cook for another 2–3 minutes, removing them once they form a loose 'C' shape.
- Transfer to a platter and immediately drizzle with fresh lemon juice.
