Ingredients:

  • 1 lb jumbo shrimp, peeled and deveined, tail-on
  • 1 tbsp neutral oil
  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions:

  1. Pat the shrimp thoroughly with paper towels to remove excess moisture.
  2. In a large bowl, whisk together the extra-virgin olive oil, minced garlic, smoked paprika, salt, and pepper.
  3. Add the shrimp to the bowl and toss gently until evenly coated in the marinade.
  4. Preheat the outdoor grill or indoor grill pan to high heat (approx. 400°F to 450°F).
  5. Lightly brush the grill grates with neutral oil to prevent sticking.
  6. Place shrimp on the grill and sear undisturbed for 2–3 minutes until golden-brown.
  7. Flip the shrimp and cook for another 2–3 minutes, removing them once they form a loose 'C' shape.
  8. Transfer to a platter and immediately drizzle with fresh lemon juice.
