Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 1 cup sliced carrots, thin rounds
  • 1 cup red bell pepper, chopped
  • 2 tbsp unsalted butter
  • 1/3 cup honey
  • 3 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/2 tsp black pepper

Instructions:

  1. In a large bowl, toss the cubed chicken, broccoli, carrots, and bell peppers. Pour the whisked honey-garlic glaze over the mixture and stir until every piece is coated in a glossy sheen.
  2. Tear four large sheets of heavy-duty foil. Place a portion of the mixture in the center of each sheet. Top each pile with one pat of butter. Fold the sides of the foil upward and pinch the top tightly to create a sealed pouch with a small amount of headspace for steam.
  3. Place packets on a medium-high grill (approx. 375°F / 190°C). Close the lid and cook for 20 minutes.
  4. Open one packet carefully and ensure the chicken is opaque throughout and reaches an internal temperature of 165°F (74°C).
