Ingredients:
- 8 slices of white bread (or whole grain, crusts removed)
- 1 medium cucumber, thinly sliced
- 4 oz (113 g) cream cheese, softened
- 2 tbsp (30 ml) Greek yogurt (or sour cream)
- 1 tbsp (15 g) fresh dill, finely chopped (or 1 tsp dried)
- 1 tbsp (15 g) fresh chives, finely chopped
- 1 tsp (5 ml) lemon juice
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine the softened cream cheese and Greek yogurt. Add in the dill, chives, lemon juice, salt, and pepper. Mix until smooth and well blended.
- Spread a generous layer of the herb spread on one side of each slice of bread. Layer cucumber slices evenly on half of the bread slices. Top with the other slices of bread, spread side down.
- Gently press down on the sandwiches to adhere the layers. Cut sandwiches into quarters or triangles for serving.
