Ingredients:
- 2 large sweet potatoes (about 1.5 lbs / 680g total), scrubbed and dried
- 2 tablespoons olive oil (30ml)
- 1/2 teaspoon sea salt (2.5g), or to taste
- Pinch of black pepper (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes thoroughly. Poke each potato several times with a fork (this prevents them from exploding!).
- Place the sweet potatoes on the baking sheet. Drizzle with olive oil and rub to coat evenly. Sprinkle with sea salt (and pepper, if using).
- Roast in the preheated oven for 45-60 minutes, or until a fork easily pierces the flesh. The cooking time will depend on the size of your sweet potatoes.
- Remove from the oven and let cool slightly before serving. Serve whole or sliced.
