Ingredients:

  • 2 large sweet potatoes (about 1.5 lbs / 680g total), scrubbed and dried
  • 2 tablespoons olive oil (30ml)
  • 1/2 teaspoon sea salt (2.5g), or to taste
  • Pinch of black pepper (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes thoroughly. Poke each potato several times with a fork (this prevents them from exploding!).
  3. Place the sweet potatoes on the baking sheet. Drizzle with olive oil and rub to coat evenly. Sprinkle with sea salt (and pepper, if using).
  4. Roast in the preheated oven for 45-60 minutes, or until a fork easily pierces the flesh. The cooking time will depend on the size of your sweet potatoes.
  5. Remove from the oven and let cool slightly before serving. Serve whole or sliced.
