Ingredients:
- 1 medium spaghetti squash (about 2-3 pounds / 900g - 1.4kg)
- 2 tablespoons (30ml) olive oil
- 1 teaspoon (5g) salt
- ½ teaspoon (2g) black pepper
- Optional: 1 teaspoon (5g) garlic powder or Italian seasoning for added flavor
Instructions:
- Preheat the oven to 400°F (200°C).
- Carefully cut the spaghetti squash in half lengthwise.
- Scoop out the seeds and stringy bits with a spoon.
- Brush the insides of the squash halves with olive oil.
- Sprinkle with salt, pepper, and optional seasonings.
- Place the squash cut-side down on a parchment-lined baking sheet.
- Roast for 30-40 minutes, until tender (squash should easily pierce with a fork).
- Once cooked, let cool slightly and use a fork to scrape the flesh, creating spaghetti-like strands.
