Ingredients:

  • 1 medium spaghetti squash (about 2-3 pounds / 900g - 1.4kg)
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5g) salt
  • ½ teaspoon (2g) black pepper
  • Optional: 1 teaspoon (5g) garlic powder or Italian seasoning for added flavor

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Carefully cut the spaghetti squash in half lengthwise.
  3. Scoop out the seeds and stringy bits with a spoon.
  4. Brush the insides of the squash halves with olive oil.
  5. Sprinkle with salt, pepper, and optional seasonings.
  6. Place the squash cut-side down on a parchment-lined baking sheet.
  7. Roast for 30-40 minutes, until tender (squash should easily pierce with a fork).
  8. Once cooked, let cool slightly and use a fork to scrape the flesh, creating spaghetti-like strands.
