Ingredients:

  • 1 large head of garlic (about 300g)
  • 2 tablespoons of extra virgin olive oil (30ml)
  • Pinch of salt (to taste)
  • Freshly ground black pepper (to taste)
  • Optional: Fresh herbs (e.g., thyme or rosemary)

Instructions:

  1. Preheat to 400°F (200°C).
  2. Slice the top off the head of garlic, exposing the cloves. Place garlic on a piece of aluminum foil.
  3. Drizzle with olive oil and season generously with salt and pepper. Optionally, sprinkle fresh herbs for added flavor.
  4. Wrap the garlic tightly in the foil. Place on a baking sheet and roast for 35-40 minutes.
  5. Remove from oven; garlic should be soft and golden. Allow to cool slightly before handling.
  6. Unwrap and gently squeeze the roasted cloves out of their skins. Serve warm as a spread or incorporate into your favorite dishes.
