Ingredients:

  • 1 medium-large sweet potato (8-10 ounces / 225-285g)
  • 1 tablespoon olive oil
  • ¼ teaspoon salt (coarse sea salt preferred)
  • Pinch of black pepper (freshly ground)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes thoroughly and dry. Pierce each sweet potato several times with a fork or knife.
  3. Rub each sweet potato with olive oil, ensuring even coverage.
  4. Sprinkle with salt and pepper.
  5. Place sweet potatoes directly on the baking sheet. Bake for 45-75 minutes, depending on size. Check for doneness: Sweet potatoes are done when they are easily pierced with a fork and the flesh feels soft. An internal temperature of 205-215°F (96-102°C) indicates doneness.
  6. Remove from oven and let cool slightly before handling (optional).
