Ingredients:

  • 4 medium russet potatoes (approx. 8-10 oz / 225-285g each), scrubbed clean
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon coarse sea salt (5g)
  • ½ teaspoon freshly ground black pepper (2.5g)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes thoroughly and dry with a clean kitchen towel.
  3. Pierce each potato several times with a fork. This allows steam to escape and prevents explosions.
  4. Rub each potato generously with olive oil, ensuring it's evenly coated. Sprinkle generously with sea salt and black pepper.
  5. Place the potatoes directly on the baking sheet. Bake for 45-60 minutes, or until the potatoes are easily pierced with a fork and the skin is crispy.
  6. Remove from the oven and let cool slightly before serving with your favorite toppings.
