Ingredients:
- 2 medium camote (sweet potatoes), about 8-10 ounces each (225-285g each)
- 1 tablespoon olive oil (15 ml) optional, for skin crisping
- Sea salt and freshly ground black pepper, to taste
- Toppings of your choice (see Serving Suggestions/Variations below)
Instructions:
- Preheat oven to 400°F (200°C).
- Wash camote thoroughly. Pat dry.
- Use a fork to prick the camote several times. Rub with olive oil (if using) and season with salt and pepper.
- Place camote directly on the baking sheet. Bake for 45-60 minutes, or until very soft and easily pierced with a fork.
- Camote is done when internal temperature reaches 205-210°F (96-99°C).
- Let cool slightly before handling. Slice open and fluff the flesh with a fork. Add your desired toppings and serve immediately.
