Ingredients:
- 2 cups (240g) all-purpose flour
- 1 cup (120g) whole wheat flour
- 1 teaspoon (5g) salt
- 1 tablespoon (12g) sugar
- 2 teaspoons (7g) instant yeast
- 1 tablespoon (15ml) olive oil
- 1 cup (240ml) warm water (about 110°F/43°C)
Instructions:
- Combine the all-purpose flour, whole wheat flour, salt, sugar, and instant yeast in a large mixing bowl.
- Create a well in the centre, add warm water and olive oil, and stir until a dough forms.
- Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm place for 1 hour or until doubled in size.
- Punch down the risen dough, divide it into 8 equal pieces, and roll each into a ball. Flatten into disks about 1/4 inch thick.
- Allow the disks to rest for 15-20 minutes while preheating your oven to 475°F (245°C).
- Place the disks on a baking sheet or stone and bake for 3-5 minutes or until puffed and lightly golden.
- Remove from the oven and cover with a clean towel to keep warm and soft.
