Ingredients:
- 2 lbs Chicken Wings (flats and drumettes separated)
- 1 tbsp Aluminum-free Baking Powder
- 1 tsp Kosher Salt
- 1 tbsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Black Pepper
- 1/4 tsp Cayenne Pepper
- 1/4 cup Apple Cider Vinegar
- 1 tbsp Hot Sauce
- 1 tsp Honey
Instructions:
- Pat wings completely dry with paper towels. <small>Note: This is the most important step for achieving a crisp texture.</small>
- Combine baking powder, salt, and all spices in a large bowl.
- Toss the wings in the spice mixture until they are thoroughly and evenly coated.
- Preheat your pellet grill to 225°F (107°C) using your choice of wood pellets.
- Arrange the wings directly on the grill grates, leaving space between each for airflow.
- Smoke the wings for 30 minutes <strong>until they take on a light, matte tan color</strong>.
- Turn the grill temperature up to 400°F (204°C).
- Cook for another 25–30 minutes, flipping once, <strong>until the skin is bubbling and golden brown</strong>.
- Whisk the vinegar, hot sauce, and honey in a small bowl while the wings finish.
- Remove wings from the grill and toss lightly with the glaze or serve it on the side.
