Ingredients:

  • 1 cup (240ml) rolled oats (not instant)
  • ½ cup (120ml) natural peanut butter (smooth or chunky)
  • ⅓ cup (80ml) honey or maple syrup
  • ¼ cup (60ml) ground flaxseed or chia seeds
  • 2 tablespoons (30ml) shredded unsweetened coconut, plus extra for rolling
  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon (1.25ml) salt
  • ¼ cup (60ml) mini chocolate chips (optional)

Instructions:

  1. In a large bowl, combine rolled oats, flaxseed (or chia seeds), coconut, salt, and optional chocolate chips.
  2. Add peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
  3. Stir until everything is thoroughly combined. The mixture should be quite thick and sticky.
  4. Cover the bowl and refrigerate for at least 30 minutes. This helps the mixture firm up and makes it easier to roll.
  5. Use your hands to roll the mixture into 1-inch balls.
  6. Roll each ball in shredded coconut, cocoa powder, chopped nuts, or sprinkles (optional).
  7. Place the bliss balls on a baking sheet lined with parchment paper or a silicone mat and chill for another 15 minutes to help them set (optional).
  8. Enjoy immediately! Store leftovers in an airtight container in the refrigerator for up to a week.
