Ingredients:
- 1 cup (240ml) rolled oats (not instant)
- ½ cup (120ml) natural peanut butter (smooth or chunky)
- ⅓ cup (80ml) honey or maple syrup
- ¼ cup (60ml) ground flaxseed or chia seeds
- 2 tablespoons (30ml) shredded unsweetened coconut, plus extra for rolling
- 1 teaspoon (5ml) vanilla extract
- ¼ teaspoon (1.25ml) salt
- ¼ cup (60ml) mini chocolate chips (optional)
Instructions:
- In a large bowl, combine rolled oats, flaxseed (or chia seeds), coconut, salt, and optional chocolate chips.
- Add peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
- Stir until everything is thoroughly combined. The mixture should be quite thick and sticky.
- Cover the bowl and refrigerate for at least 30 minutes. This helps the mixture firm up and makes it easier to roll.
- Use your hands to roll the mixture into 1-inch balls.
- Roll each ball in shredded coconut, cocoa powder, chopped nuts, or sprinkles (optional).
- Place the bliss balls on a baking sheet lined with parchment paper or a silicone mat and chill for another 15 minutes to help them set (optional).
- Enjoy immediately! Store leftovers in an airtight container in the refrigerator for up to a week.
