Ingredients:

  • 1 cup (240ml) Milk
  • 1/2 cup (120ml) Vegetable Oil
  • 1 Large Egg
  • 2 cups (240g) Tapioca Flour (also known as Tapioca Starch)
  • 1 teaspoon Salt
  • 1 cup (100g) Grated Parmesan Cheese
  • 1 cup (100g) Grated Minas Cheese OR Mozzarella Cheese (can use a mix of both)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a blender, combine milk, oil, and egg. Blend until smooth.
  3. Add tapioca flour and salt to the blender. Blend until a smooth, slightly thick batter forms.
  4. Add the Parmesan and Minas (or Mozzarella) cheese to the blender. Pulse until just combined. Do not over-blend!
  5. Let the dough rest for about 5 minutes. This allows the tapioca flour to fully hydrate.
  6. Drop spoonfuls (or use a cookie scoop) of the batter onto a prepared baking sheet.
  7. Bake for 20-25 minutes, or until the cheese balls are puffed up and lightly golden brown.
  8. Let cool slightly on the baking sheet before serving. They are best enjoyed warm!
