Ingredients:
- 1 cup (240ml) Milk
- 1/2 cup (120ml) Vegetable Oil
- 1 Large Egg
- 2 cups (240g) Tapioca Flour (also known as Tapioca Starch)
- 1 teaspoon Salt
- 1 cup (100g) Grated Parmesan Cheese
- 1 cup (100g) Grated Minas Cheese OR Mozzarella Cheese (can use a mix of both)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a blender, combine milk, oil, and egg. Blend until smooth.
- Add tapioca flour and salt to the blender. Blend until a smooth, slightly thick batter forms.
- Add the Parmesan and Minas (or Mozzarella) cheese to the blender. Pulse until just combined. Do not over-blend!
- Let the dough rest for about 5 minutes. This allows the tapioca flour to fully hydrate.
- Drop spoonfuls (or use a cookie scoop) of the batter onto a prepared baking sheet.
- Bake for 20-25 minutes, or until the cheese balls are puffed up and lightly golden brown.
- Let cool slightly on the baking sheet before serving. They are best enjoyed warm!
