Ingredients:
- 2 cups (475ml) unsweetened almond milk
- 1/2 cup (75g) chia seeds
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 vanilla bean, split lengthwise and seeds scraped (optional)
- Pinch of sea salt
Instructions:
- In a medium bowl (or individual jars), whisk together almond milk, chia seeds, maple syrup, vanilla extract, vanilla bean seeds (if using), and salt.
- Ensure all the chia seeds are well incorporated to prevent clumping.
- Cover the bowl or seal the jars and refrigerate for at least 4 hours, or preferably overnight.
- After the initial chilling, stir the pudding again to break up any clumps that may have formed.
- Spoon the chia seed pudding into bowls and top with your favorite toppings like fresh berries, granola, and nuts.
