Ingredients:

  • 1 cup (240 ml) unsweetened milk (dairy or non-dairy, such as almond, oat, or coconut)
  • 1/4 cup (40g) chia seeds
  • 1 Tablespoon (15 ml) maple syrup (or honey, agave, or your preferred sweetener)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: Fresh berries (strawberries, blueberries, raspberries), sliced bananas, chopped nuts (almonds, walnuts, pecans), seeds (pumpkin, sunflower), granola, shredded coconut, nut butter (peanut, almond), chocolate chips (or cacao nibs), fruit compote

Instructions:

  1. In a jar or container, add the milk, chia seeds, maple syrup (or sweetener), vanilla extract, and salt.
  2. Whisk or stir vigorously to ensure the chia seeds are evenly distributed and there are no clumps. This is crucial to prevent lumps.
  3. Cover the jar/container tightly and refrigerate for at least 2 hours, or preferably overnight.
  4. After about 30 minutes, give the pudding another stir to prevent clumping, especially if using a thicker non-dairy milk.
