Ingredients:
- 1 cup (240 ml) unsweetened milk (dairy or non-dairy, such as almond, oat, or coconut)
- 1/4 cup (40g) chia seeds
- 1 Tablespoon (15 ml) maple syrup (or honey, agave, or your preferred sweetener)
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Optional toppings: Fresh berries (strawberries, blueberries, raspberries), sliced bananas, chopped nuts (almonds, walnuts, pecans), seeds (pumpkin, sunflower), granola, shredded coconut, nut butter (peanut, almond), chocolate chips (or cacao nibs), fruit compote
Instructions:
- In a jar or container, add the milk, chia seeds, maple syrup (or sweetener), vanilla extract, and salt.
- Whisk or stir vigorously to ensure the chia seeds are evenly distributed and there are no clumps. This is crucial to prevent lumps.
- Cover the jar/container tightly and refrigerate for at least 2 hours, or preferably overnight.
- After about 30 minutes, give the pudding another stir to prevent clumping, especially if using a thicker non-dairy milk.
