Ingredients:

  • 4 medium sweet potatoes, scrubbed clean (about 8-10 ounces/225-285g each)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon kosher salt (5 ml)
  • ½ teaspoon freshly ground black pepper (2.5 ml)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Scrub sweet potatoes clean. Prick each potato several times with a fork.
  3. Place potatoes on a baking sheet. Drizzle with olive oil, and rub to coat evenly. Sprinkle with salt and pepper.
  4. Bake for 45-75 minutes, or until easily pierced with a fork. Check for doneness after 45 minutes, especially if using smaller potatoes. Potatoes should feel soft and yielding when squeezed gently (using oven mitts!).
  5. Let cool slightly before serving. Cut open and fluff with a fork.
