Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 cup milk (whole or plant-based)
  • 2 tablespoons unsalted butter, melted (or coconut oil)
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (optional)
  • ½ cup blueberries or diced strawberries (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the muffin tin.
  2. In a large mixing bowl, combine dry ingredients: flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the wet ingredients: egg, milk, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients; combine until just blended (small lumps are okay).
  5. If using, gently fold in mix-ins such as chocolate chips or fruit.
  6. Spoon batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 15-20 minutes until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before transferring to a wire rack.
