Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 tablespoon granulated sugar
- 1 large egg
- 1 cup milk (whole or plant-based)
- 2 tablespoons unsalted butter, melted (or coconut oil)
- 1 teaspoon vanilla extract
- ½ cup chocolate chips (optional)
- ½ cup blueberries or diced strawberries (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease the muffin tin.
- In a large mixing bowl, combine dry ingredients: flour, baking powder, salt, and sugar.
- In another bowl, whisk together the wet ingredients: egg, milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients; combine until just blended (small lumps are okay).
- If using, gently fold in mix-ins such as chocolate chips or fruit.
- Spoon batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-20 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before transferring to a wire rack.
