- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 3 very ripe bananas, mashed (about 1 ½ cups)
- ½ cup (50g) chopped walnuts or pecans (optional)
- 1 tablespoon (14g) unsalted butter, softened (or cooking spray)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
- In the large mixing bowl, whisk together flour, baking soda, cinnamon, and salt.
- Add sugar, oil, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
- Gently fold in the mashed bananas until just combined. Do not overmix!
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
