  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 3 very ripe bananas, mashed (about 1 ½ cups)
  • ½ cup (50g) chopped walnuts or pecans (optional)
  • 1 tablespoon (14g) unsalted butter, softened (or cooking spray)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
  2. In the large mixing bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. Add sugar, oil, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Gently fold in the mashed bananas until just combined. Do not overmix!
  5. If using, fold in the chopped walnuts or pecans.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
