Ingredients:

  • 1 head of garlic
  • 1 tablespoon olive oil (15 mL)
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 cup (1 stick) unsalted butter, softened (113g)
  • 1/4 cup finely chopped fresh chives (approx. 15g)
  • 1/4 teaspoon salt (1.5g)
  • 1/8 teaspoon black pepper (0.75g)
  • Optional: 1/4 cup grated Parmesan cheese (25g)
  • 1 large French baguette (about 24 inches long) (60cm)

Instructions:

  1. Preheat oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, sprinkle with salt and pepper, wrap in foil (or place in a small baking dish), and bake for 30-40 minutes, or until the cloves are soft and fragrant. Let cool slightly.
  2. While the garlic cools, soften the butter. Squeeze the roasted garlic cloves into a small bowl. Mash with a fork. Add the softened butter, chives, salt, pepper, and optional Parmesan cheese (if using). Mix well until fully combined.
  3. Preheat oven to 375°F (190°C). Slice the baguette lengthwise.
  4. Generously spread the garlic chive butter over both halves of the baguette.
  5. Place the buttered baguette halves on a baking sheet and bake for 15-20 minutes, or until golden brown and the butter is melted and bubbly.
  6. Remove from the oven, slice, and serve immediately.
