Ingredients:

  • 1 cup (120g) oat flour
  • 1 ripe banana, mashed
  • 1 cup (240ml) milk (or non-dairy alternative)
  • 1 large egg
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon (15ml) unsalted butter or oil for frying

Instructions:

  1. Gather all ingredients and measure the oat flour, milk, and other items.
  2. In a medium mixing bowl, whisk together oat flour, baking powder, baking soda, and salt.
  3. In another bowl, mix mashed banana, milk, egg, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour wet ingredients into the dry ingredients and gently stir until just combined.
  5. Preheat a non-stick skillet over medium heat and add butter or oil.
  6. Pour about ¼ cup (60ml) of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 3-4 minutes).
  7. Flip pancakes and cook until golden brown on the other side (another 2-3 minutes).
  8. Stack and serve immediately with your favorite toppings.
