Ingredients:
- 1 cup (120g) oat flour
- 1 ripe banana, mashed
- 1 cup (240ml) milk (or non-dairy alternative)
- 1 large egg
- 2 tablespoons (30ml) honey or maple syrup
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon (15ml) unsalted butter or oil for frying
Instructions:
- Gather all ingredients and measure the oat flour, milk, and other items.
- In a medium mixing bowl, whisk together oat flour, baking powder, baking soda, and salt.
- In another bowl, mix mashed banana, milk, egg, honey (or maple syrup), and vanilla extract until smooth.
- Pour wet ingredients into the dry ingredients and gently stir until just combined.
- Preheat a non-stick skillet over medium heat and add butter or oil.
- Pour about ¼ cup (60ml) of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 3-4 minutes).
- Flip pancakes and cook until golden brown on the other side (another 2-3 minutes).
- Stack and serve immediately with your favorite toppings.
