Ingredients:

  • 1 cup (2 sticks/227g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¼ cups (281g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Icing (optional)
  • Sprinkles (optional)
  • Food coloring (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing!
  6. Drop rounded tablespoons of dough onto the prepared baking sheets or roll out and cut shapes. Place onto baking sheets.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Watch them carefully – they bake quickly!
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, decorate with icing, sprinkles, and any other festive toppings!
