Ingredients:
- 1 cup (2 sticks/227g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ¼ cups (281g) all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Icing (optional)
- Sprinkles (optional)
- Food coloring (optional)
Instructions:
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone mats.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing!
- Drop rounded tablespoons of dough onto the prepared baking sheets or roll out and cut shapes. Place onto baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden. Watch them carefully – they bake quickly!
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, decorate with icing, sprinkles, and any other festive toppings!
