Ingredients:
- 240 g Chocolate Sandwich Biscuits (Oreos, filling removed, or chocolate wafers)
- 115 g Unsalted Butter, melted
- 225 g Full-Fat Cream Cheese, softened to room temperature
- 250 g Creamy Peanut Butter (do not use natural/runny style)
- 175 g Icing Sugar (Powdered Sugar / Confectioners’ Sugar), sifted
- 1 tsp Pure Vanilla Extract
- 360 ml Heavy Whipping Cream (minimum 35% fat), chilled
- 2 tbsp Chopped Salted Peanuts (optional garnish)
- 20 g Dark Chocolate, shaved or grated (optional garnish)
Instructions:
- Prepare the Crust: Process the chocolate wafers until they resemble fine, damp sand. Pour the melted butter over the crushed wafers and mix until the mixture is evenly saturated.
- Press the mixture firmly and evenly into the base and up the sides of a 9-inch pie dish. Use the bottom of a measuring cup or glass to ensure a tight, compact crust.
- Initial Chill: Place the crust in the freezer for 15 minutes while preparing the filling.
- Prepare the Filling Base: In a large bowl, use an electric mixer to beat the softened cream cheese until it is light and completely smooth. Beat in the creamy peanut butter and vanilla extract until fully combined. Gradually beat in the sifted icing sugar until the mixture is cohesive and fluffy. Set aside.
- Whip the Cream: In a separate, clean, and chilled bowl, whip the cold heavy cream on medium-high speed until stiff peaks form. Be careful not to over-whip.
- Assemble the Pie: Gently fold one-third of the whipped cream into the peanut butter mixture to lighten the texture. Then, add the remaining two-thirds of the whipped cream and use a rubber spatula to gently fold everything together until just combined. Stop mixing when you no longer see streaks of white cream.
- Fill and Set: Spoon the filling evenly into the chilled crust and smooth the top. Cover the pie loosely and refrigerate for a minimum of 4 hours, or ideally overnight, until firm.
- Garnish and Serve: Allow the pie to sit at room temperature for 5-10 minutes before slicing. Top each slice with an optional dollop of fresh whipped cream, a sprinkle of chopped peanuts, and chocolate shavings.
