Ingredients:
- 1.5 cups old-fashioned rolled oats (135g)
- 1 scoop vanilla or chocolate protein powder (30g)
- 2 tablespoons chia seeds (24g)
- 2 tablespoons ground flaxseed meal (14g)
- 0.5 cup creamy natural peanut butter (125g)
- 0.33 cup honey or pure maple syrup (80ml)
- 1 teaspoon vanilla extract (5ml)
- 0.33 cup mini dark chocolate chips (60g)
- 1 pinch sea salt
- 1 tablespoon water or almond milk
Instructions:
- In a large mixing bowl, whisk together the rolled oats, protein powder, chia seeds, flaxseed meal, and sea salt until well combined and no protein powder clumps remain.
- Add the creamy peanut butter, honey, and vanilla extract to the dry mixture.
- Using a stiff silicone spatula or wooden spoon, fold the ingredients together until a thick, tacky dough forms. If the mixture is too dry or sandy, add 1 tablespoon of water or almond milk.
- Gently fold in the mini dark chocolate chips until evenly distributed.
- Place the bowl in the refrigerator for 10–20 minutes to allow the oats to hydrate and the dough to firm up for easier handling.
- Using a 1-tablespoon cookie scoop, portion the dough and roll between your palms to form approximately 20 smooth spheres.
- Place the balls on a parchment-lined tray and refrigerate for 30 minutes to set completely before transferring to an airtight container.
