Ingredients:

  • 1.5 cups old-fashioned rolled oats (135g)
  • 1 scoop vanilla or chocolate protein powder (30g)
  • 2 tablespoons chia seeds (24g)
  • 2 tablespoons ground flaxseed meal (14g)
  • 0.5 cup creamy natural peanut butter (125g)
  • 0.33 cup honey or pure maple syrup (80ml)
  • 1 teaspoon vanilla extract (5ml)
  • 0.33 cup mini dark chocolate chips (60g)
  • 1 pinch sea salt
  • 1 tablespoon water or almond milk

Instructions:

  1. In a large mixing bowl, whisk together the rolled oats, protein powder, chia seeds, flaxseed meal, and sea salt until well combined and no protein powder clumps remain.
  2. Add the creamy peanut butter, honey, and vanilla extract to the dry mixture.
  3. Using a stiff silicone spatula or wooden spoon, fold the ingredients together until a thick, tacky dough forms. If the mixture is too dry or sandy, add 1 tablespoon of water or almond milk.
  4. Gently fold in the mini dark chocolate chips until evenly distributed.
  5. Place the bowl in the refrigerator for 10–20 minutes to allow the oats to hydrate and the dough to firm up for easier handling.
  6. Using a 1-tablespoon cookie scoop, portion the dough and roll between your palms to form approximately 20 smooth spheres.
  7. Place the balls on a parchment-lined tray and refrigerate for 30 minutes to set completely before transferring to an airtight container.
