Ingredients:
- 1 cup (90g) rolled oats
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 cup (150g) peanut butter (or any nut/seed butter)
- 1/3 cup (100g) honey (or maple syrup for vegan option)
- 1/4 cup (70g) mini chocolate chips
- 1 tsp (5ml) vanilla extract
- Extra mini chocolate chips or crushed nuts (optional)
Instructions:
- In a mixing bowl, stir together rolled oats and cocoa powder until well combined.
- Add peanut butter, honey, and vanilla extract. Mix until all ingredients are fully incorporated.
- Gently fold in mini chocolate chips until evenly distributed.
- Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls.
- Place the chocolate oat bites on a lined baking sheet or plate, then refrigerate for about 30 minutes to firm up.
- Enjoy chilled or at room temperature, and optionally sprinkle with extra chocolate chips or nuts before serving.
