Ingredients:

  • 1 cup (90g) rolled oats
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 cup (150g) peanut butter (or any nut/seed butter)
  • 1/3 cup (100g) honey (or maple syrup for vegan option)
  • 1/4 cup (70g) mini chocolate chips
  • 1 tsp (5ml) vanilla extract
  • Extra mini chocolate chips or crushed nuts (optional)

Instructions:

  1. In a mixing bowl, stir together rolled oats and cocoa powder until well combined.
  2. Add peanut butter, honey, and vanilla extract. Mix until all ingredients are fully incorporated.
  3. Gently fold in mini chocolate chips until evenly distributed.
  4. Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls.
  5. Place the chocolate oat bites on a lined baking sheet or plate, then refrigerate for about 30 minutes to firm up.
  6. Enjoy chilled or at room temperature, and optionally sprinkle with extra chocolate chips or nuts before serving.
