Ingredients:

  • 2 cups (450g) cooked chicken, shredded or diced
  • 1 cup (240ml) mayonnaise (full fat)
  • 1 (10.75 ounce) (305g) can condensed cream of chicken soup
  • ½ cup (120ml) sour cream
  • ½ cup (60g) grated cheddar cheese
  • ¼ cup (30g) chopped green onions (scallions)
  • ¼ teaspoon (1.5ml) black pepper
  • 1 sleeve (approximately 40 crackers) (120g) buttery round crackers (such as Ritz), crushed
  • 6 tablespoons (85g) unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, mayonnaise, cream of chicken soup, sour cream, cheddar cheese, green onions, and pepper. Mix well.
  3. In a small bowl, combine crushed crackers and melted butter. Toss to coat evenly.
  4. Spread the chicken mixture evenly into the prepared baking dish.
  5. Sprinkle the cracker mixture evenly over the chicken mixture.
  6. Bake for 30-35 minutes, or until golden brown and bubbly.
  7. Let the casserole cool for a few minutes before serving.
