Ingredients:
- 2 cups (450g) cooked chicken, shredded or diced
- 1 cup (240ml) mayonnaise (full fat)
- 1 (10.75 ounce) (305g) can condensed cream of chicken soup
- ½ cup (120ml) sour cream
- ½ cup (60g) grated cheddar cheese
- ¼ cup (30g) chopped green onions (scallions)
- ¼ teaspoon (1.5ml) black pepper
- 1 sleeve (approximately 40 crackers) (120g) buttery round crackers (such as Ritz), crushed
- 6 tablespoons (85g) unsalted butter, melted
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine cooked chicken, mayonnaise, cream of chicken soup, sour cream, cheddar cheese, green onions, and pepper. Mix well.
- In a small bowl, combine crushed crackers and melted butter. Toss to coat evenly.
- Spread the chicken mixture evenly into the prepared baking dish.
- Sprinkle the cracker mixture evenly over the chicken mixture.
- Bake for 30-35 minutes, or until golden brown and bubbly.
- Let the casserole cool for a few minutes before serving.
