Ingredients:

  • 1 lb (450g) flank steak, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 1 cup shiitake mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 cup shredded carrots
  • 1 cup bok choy, chopped
  • 2 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon hoisin sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon sugar
  • 8-12 thin pancakes or steamed rice

Instructions:

  2. Slice shiitake mushrooms, bell pepper, and chop bok choy. Shred carrots and chop green onions.
  3. In a small bowl, mix soy sauce, sesame oil, hoisin sauce, garlic, ginger, and sugar; set aside.
  4. Heat oil in a large skillet or wok over medium-high heat. Add marinated beef, stir-frying until browned (about 3-4 minutes); remove and set aside.
  5. In the same skillet, add mushrooms, bell pepper, and carrots. Cook for 3-4 minutes until tender. Add bok choy and green onions, stir for another 2 minutes.
  6. Return beef to the skillet and pour in sauce; mix well. Stir-fry for an additional 1-2 minutes until heated through.
