Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) fine sea salt
  • 1 cup (130g) grated carrots
  • 1 cup (130g) grated crisp apple
  • 1/2 cup (75g) raisins
  • 1/2 cup (60g) chopped pecans
  • 1/4 cup (20g) unsweetened shredded coconut
  • 2 large eggs
  • 1 1/2 cups (355ml) unsweetened almond milk
  • 1/4 cup (80ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish with coconut oil or non-stick spray.
  2. In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt until evenly distributed.
  3. Fold in the grated carrots, grated apple, raisins, pecans, and shredded coconut. Stir well to ensure the fruits and nuts are suspended throughout the oat mixture.
  4. In a separate small bowl, whisk the eggs, milk, maple syrup, and vanilla extract until smooth.
  5. Pour the liquid mixture over the dry ingredients and fold gently with a spatula until just combined—do not over-mix.
  6. Pour the batter into the prepared dish and smooth the top. Bake for 30–35 minutes, or until the edges are golden brown and the center feels firm to the touch.
  7. Let it cool for 10 minutes before slicing into squares.
