Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) fine sea salt
- 1 cup (130g) grated carrots
- 1 cup (130g) grated crisp apple
- 1/2 cup (75g) raisins
- 1/2 cup (60g) chopped pecans
- 1/4 cup (20g) unsweetened shredded coconut
- 2 large eggs
- 1 1/2 cups (355ml) unsweetened almond milk
- 1/4 cup (80ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease your baking dish with coconut oil or non-stick spray.
- In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt until evenly distributed.
- Fold in the grated carrots, grated apple, raisins, pecans, and shredded coconut. Stir well to ensure the fruits and nuts are suspended throughout the oat mixture.
- In a separate small bowl, whisk the eggs, milk, maple syrup, and vanilla extract until smooth.
- Pour the liquid mixture over the dry ingredients and fold gently with a spatula until just combined—do not over-mix.
- Pour the batter into the prepared dish and smooth the top. Bake for 30–35 minutes, or until the edges are golden brown and the center feels firm to the touch.
- Let it cool for 10 minutes before slicing into squares.
