Ingredients:
- 1.5 cups all-purpose flour
- 0.5 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 0.5 cup vegetable oil
- 0.75 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1.5 cups grated zucchini
- 0.5 cup chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- Whisk the vegetable oil, sugar, egg, and vanilla extract in a large bowl until the mixture is smooth and glossy.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
- Stir the mixture gently with a spatula. Stop as soon as you see no more dry flour streaks.
- Fold in the grated zucchini and chopped walnuts using a circular motion until the green flecks are evenly spread.
- Pour the batter into your prepared pan and smooth the top with a spoon.
- Bake for 50–60 minutes, checking at the 50 minute mark.
- Remove from the oven when a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 mins before moving it to a wire rack.
