Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup vegetable oil
  • 0.75 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini
  • 0.5 cup chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. Whisk the vegetable oil, sugar, egg, and vanilla extract in a large bowl until the mixture is smooth and glossy.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
  4. Stir the mixture gently with a spatula. Stop as soon as you see no more dry flour streaks.
  5. Fold in the grated zucchini and chopped walnuts using a circular motion until the green flecks are evenly spread.
  6. Pour the batter into your prepared pan and smooth the top with a spoon.
  7. Bake for 50–60 minutes, checking at the 50 minute mark.
  8. Remove from the oven when a toothpick inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 mins before moving it to a wire rack.
