Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • ½ cup (120ml) vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (about 200g) grated zucchini (about 1 medium zucchini)
  • ½ cup (75g) chopped walnuts or pecans (optional)
  • ½ cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it or lining it with parchment paper.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, mix the granulated sugar, brown sugar, oil, eggs, and vanilla until combined. Use a whisk for a light and fluffy mixture.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  6. Fold in the grated zucchini and any optional add-ins (nuts or chocolate chips). The batter should be thick but not dry.
  7. Pour the batter into the prepared loaf pan, smoothing the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. The bread should spring back when gently pressed.
  9. Allow to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
