Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ cup (100g) granulated sugar
- ½ cup (100g) packed brown sugar
- ½ cup (120ml) vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups (about 200g) grated zucchini (about 1 medium zucchini)
- ½ cup (75g) chopped walnuts or pecans (optional)
- ½ cup (90g) chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix the granulated sugar, brown sugar, oil, eggs, and vanilla until combined. Use a whisk for a light and fluffy mixture.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
- Fold in the grated zucchini and any optional add-ins (nuts or chocolate chips). The batter should be thick but not dry.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. The bread should spring back when gently pressed.
- Allow to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
