Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a standard 9x5 inch loaf pan, or line it with parchment paper with an overhang.
- In a medium bowl, thoroughly mash the ripe bananas until mostly smooth.
- In a large bowl, whisk together the cooled melted butter, granulated sugar, and brown sugar until combined. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet ingredients using a spatula. Mix only until just combined; do not overmix.
- Gently fold in the chopped nuts.
- Pour the batter into the prepared loaf pan, smoothing the top. Bake for 55 to 65 minutes, or until a skewer inserted into the centre comes out clean or with moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.
