Ingredients:
- 4 medium ripe tomatoes, diced (about 600 grams)
- 1 medium red onion, finely chopped (about 150 grams)
- 1-2 chipotle peppers in adobo sauce, minced
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped (about 15 grams)
- Juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/2 teaspoon of smoked paprika
Instructions:
- Wash and dice the tomatoes.
- Peel and finely chop the red onion.
- Mince the garlic and chipotle peppers.
- Chop the cilantro.
- In a mixing bowl, combine the diced tomatoes, chopped onion, garlic, chipotle peppers, and cilantro.
- Squeeze in the lime juice.
- Season with salt, black pepper, and smoked paprika (if using).
- Gently stir all ingredients until well combined.
- Taste and adjust seasoning as necessary.
- Transfer to a serving bowl and enjoy with tortilla chips or as a topping for your favorite dishes.
