Ingredients:

  • 4 medium ripe tomatoes, diced (about 600 grams)
  • 1 medium red onion, finely chopped (about 150 grams)
  • 1-2 chipotle peppers in adobo sauce, minced
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped (about 15 grams)
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 teaspoon of smoked paprika

Instructions:

  1. Wash and dice the tomatoes.
  2. Peel and finely chop the red onion.
  3. Mince the garlic and chipotle peppers.
  4. Chop the cilantro.
  5. In a mixing bowl, combine the diced tomatoes, chopped onion, garlic, chipotle peppers, and cilantro.
  6. Squeeze in the lime juice.
  7. Season with salt, black pepper, and smoked paprika (if using).
  8. Gently stir all ingredients until well combined.
  9. Taste and adjust seasoning as necessary.
  10. Transfer to a serving bowl and enjoy with tortilla chips or as a topping for your favorite dishes.
