Ingredients:

  • 4 cups mixed salad greens (e.g., arugula, baby spinach, kale)
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup radishes, thinly sliced
  • ½ avocado, sliced
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Wash and dry the mixed salad greens thoroughly. Tear or chop greens into bite-sized pieces; place them in a large bowl.
  2. Halve the cherry tomatoes and add them to the bowl. Dice the cucumber and thinly slice the red onion and radishes; add to the bowl.
  3. Carefully slice the avocado and set it aside for garnish.
  4. In a small bowl or jar, combine olive oil, orange juice, lemon juice, honey, salt, and pepper. Whisk until well blended or shake in the jar until emulsified.
  5. Drizzle the vinaigrette over the salad and toss gently to coat all ingredients.
  6. Garnish with sliced avocado on top and serve immediately.
