Ingredients:
- 4 cups mixed salad greens (e.g., arugula, baby spinach, kale)
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup red onion, thinly sliced
- ¼ cup radishes, thinly sliced
- ½ avocado, sliced
- ¼ cup extra-virgin olive oil
- 2 tablespoons fresh orange juice
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions:
- Wash and dry the mixed salad greens thoroughly. Tear or chop greens into bite-sized pieces; place them in a large bowl.
- Halve the cherry tomatoes and add them to the bowl. Dice the cucumber and thinly slice the red onion and radishes; add to the bowl.
- Carefully slice the avocado and set it aside for garnish.
- In a small bowl or jar, combine olive oil, orange juice, lemon juice, honey, salt, and pepper. Whisk until well blended or shake in the jar until emulsified.
- Drizzle the vinaigrette over the salad and toss gently to coat all ingredients.
- Garnish with sliced avocado on top and serve immediately.
