Ingredients:
- 16 oz dried Mission figs, stems removed
- 1 cup water
- 1/4 cup balsamic vinegar
- 2 tbsp lemon juice
- 1/4 cup brown sugar
- 1/4 tsp salt
- 1 cinnamon stick
- 1 tsp vanilla extract
Instructions:
- Combine the dried Mission figs, water, and cinnamon stick in a heavy-bottomed saucepan.
- Bring the mixture to a gentle simmer over medium heat for 8–10 minutes until the figs are plump and the liquid is slightly reduced.
- Stir in the balsamic vinegar, lemon juice, brown sugar, and salt.
- Lower the heat and simmer for another 5–7 minutes until the mixture thickens and the bubbles become slow and heavy.
- Remove the cinnamon stick from the pot.
- Use an immersion blender directly in the pot to process the mixture until the desired consistency is reached.
- Stir in the vanilla extract and remove from heat immediately.
