Ingredients:

  • 16 oz dried Mission figs, stems removed
  • 1 cup water
  • 1/4 cup balsamic vinegar
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 1 cinnamon stick
  • 1 tsp vanilla extract

Instructions:

  1. Combine the dried Mission figs, water, and cinnamon stick in a heavy-bottomed saucepan.
  2. Bring the mixture to a gentle simmer over medium heat for 8–10 minutes until the figs are plump and the liquid is slightly reduced.
  3. Stir in the balsamic vinegar, lemon juice, brown sugar, and salt.
  4. Lower the heat and simmer for another 5–7 minutes until the mixture thickens and the bubbles become slow and heavy.
  5. Remove the cinnamon stick from the pot.
  6. Use an immersion blender directly in the pot to process the mixture until the desired consistency is reached.
  7. Stir in the vanilla extract and remove from heat immediately.
