Ingredients:
- ¼ cup (60 ml) white miso paste
- 2 tablespoons (30 ml) rice vinegar
- 2 tablespoons (30 ml) sesame oil
- 1 tablespoon (15 ml) soy sauce
- 1 tablespoon (15 ml) honey or maple syrup
- 1 tablespoon (15 g) freshly grated ginger
- 1 clove garlic, minced (about 1 teaspoon)
- 2-4 tablespoons (30-60 ml) water
Instructions:
- In a mixing bowl, whisk together the white miso paste, rice vinegar, sesame oil, soy sauce, honey (or maple syrup), and minced garlic.
- Grate the fresh ginger and add it to the miso mixture. Stir until well combined.
- Gradually add water, one tablespoon at a time, whisking until you reach your desired dressing consistency.
- Taste the dressing and adjust for sweetness or acidity by adding more honey/maple syrup or vinegar if needed.
- Transfer the dressing to an airtight container and refrigerate until ready to use.
