Ingredients:

  • ¼ cup (60 ml) white miso paste
  • 2 tablespoons (30 ml) rice vinegar
  • 2 tablespoons (30 ml) sesame oil
  • 1 tablespoon (15 ml) soy sauce
  • 1 tablespoon (15 ml) honey or maple syrup
  • 1 tablespoon (15 g) freshly grated ginger
  • 1 clove garlic, minced (about 1 teaspoon)
  • 2-4 tablespoons (30-60 ml) water

Instructions:

  1. In a mixing bowl, whisk together the white miso paste, rice vinegar, sesame oil, soy sauce, honey (or maple syrup), and minced garlic.
  2. Grate the fresh ginger and add it to the miso mixture. Stir until well combined.
  3. Gradually add water, one tablespoon at a time, whisking until you reach your desired dressing consistency.
  4. Taste the dressing and adjust for sweetness or acidity by adding more honey/maple syrup or vinegar if needed.
  5. Transfer the dressing to an airtight container and refrigerate until ready to use.
