Ingredients:
- 1 large English Cucumber (300g)
- 3 medium Vine-ripened Tomatoes (450g)
- 1 medium Green Bell Pepper (150g)
- 1/2 small Red Onion (50g)
- 1/3 cup Extra Virgin Olive Oil (80ml)
- 2 tbsp Red Wine Vinegar (30ml)
- 1 tbsp Fresh Lemon Juice (15ml)
- 1 tsp Dried Oregano (2g)
- 1 clove Garlic (5g), minced
- 7 oz Greek Feta Cheese (200g)
Instructions:
- Slice the cucumber, tomatoes, and bell peppers into chunky, irregular pieces. Note: Avoid perfect cubes for a more natural look
- Toss the vegetables and thinly sliced red onion into a large mixing bowl.
- Combine the olive oil, red wine vinegar, lemon juice, minced garlic, and oregano in a small jar.
- Shake vigorously for 30 seconds until the mixture looks cloudy and cohesive. Note: This creates a temporary emulsion so the oil doesn't separate
- Pour the dressing over the vegetable mix.
- Toss gently until every piece is evenly coated and glistening.
- Place the block of feta cheese directly on top of the salad.
- Sprinkle with a final pinch of oregano until the cheese is lightly dusted.
