Ingredients:
- 2 tablespoons maple syrup (30ml)
- 1 tablespoon Dijon mustard (15ml)
- 1 teaspoon apple cider vinegar (5ml)
- 2 large croissants
- 4 slices bacon
- 2 large eggs
- 1 tablespoon butter (15ml)
- 2 slices cheddar cheese
- Salt and freshly ground black pepper to taste
Instructions:
- In a small bowl, whisk together the maple syrup, Dijon mustard, and apple cider vinegar until well combined. Set aside.
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside.
- Melt the butter in the same skillet over medium-low heat. Crack the eggs into the skillet and cook to your desired doneness. Season with salt and pepper.
- Slice the croissants in half horizontally. Brush the cut sides of both halves with the maple-mustard glaze.
- Place the glazed croissant halves on a baking sheet and warm in a preheated oven at 350°F (175°C) for a few minutes until lightly toasted. (Optional)
- On the bottom half of each croissant, layer a slice of cheese, the cooked eggs, and 2 slices of bacon. Top with the other half of the croissant.
- Serve Immediately and enjoy.
