Ingredients:

  • 2 tablespoons maple syrup (30ml)
  • 1 tablespoon Dijon mustard (15ml)
  • 1 teaspoon apple cider vinegar (5ml)
  • 2 large croissants
  • 4 slices bacon
  • 2 large eggs
  • 1 tablespoon butter (15ml)
  • 2 slices cheddar cheese
  • Salt and freshly ground black pepper to taste

Instructions:

  1. In a small bowl, whisk together the maple syrup, Dijon mustard, and apple cider vinegar until well combined. Set aside.
  2. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside.
  3. Melt the butter in the same skillet over medium-low heat. Crack the eggs into the skillet and cook to your desired doneness. Season with salt and pepper.
  4. Slice the croissants in half horizontally. Brush the cut sides of both halves with the maple-mustard glaze.
  5. Place the glazed croissant halves on a baking sheet and warm in a preheated oven at 350°F (175°C) for a few minutes until lightly toasted. (Optional)
  6. On the bottom half of each croissant, layer a slice of cheese, the cooked eggs, and 2 slices of bacon. Top with the other half of the croissant.
  7. Serve Immediately and enjoy.
