Ingredients:

  • 1 cup fresh cilantro leaves, finely chopped (about 30g)
  • 4 cloves garlic, minced
  • 2 tbsp chili powder (15g)
  • 1 tbsp ground cumin (8g)
  • 1 tbsp smoked paprika (8g)
  • 1 tsp dried oregano (1g)
  • 1 tsp onion powder (3g)
  • 1/2 tsp cayenne pepper (optional for heat, 1g)
  • 1/2 cup olive oil (120ml)
  • Juice of 1 lime (about 30ml)
  • Salt to taste (about 1/2 tsp)

Instructions:

  1. Wash and finely chop the cilantro.
  2. Mince the garlic.
  3. In the food processor, add chili powder, cumin, smoked paprika, oregano, onion powder, and cayenne pepper (if using).
  4. Add minced garlic, chopped cilantro, olive oil, and lime juice to the food processor.
  5. Pulse the mixture until you achieve a smooth consistency, scraping down the sides as necessary.
  6. Taste the paste and add salt to your liking. Blend to combine.
  7. Transfer the paste into an airtight container and refrigerate until needed.
