Ingredients:

  • 1 cup (240 ml) water
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) rice vinegar
  • 2 tablespoons (30 g) corn starch
  • 2 tablespoons (30 ml) water (for slurry)
  • 1-2 tablespoons (15-30 g) red chili flakes (adjust for spice preference)
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) soy sauce
  • 1 tablespoon (15 g) fresh lime juice

Instructions:

  1. In a medium saucepan, combine water, granulated sugar, and rice vinegar.
  2. Place the saucepan over medium heat and stir until the sugar dissolves completely.
  3. In a small bowl, mix corn starch and 2 tablespoons of water to create a slurry.
  4. Stir minced garlic, red chili flakes, and soy sauce into the saucepan.
  5. Bring to a gentle boil, then gradually add the slurry, stirring constantly until the sauce thickens (about 2-3 minutes).
  6. Remove from heat and stir in lime juice.
  7. Allow the sauce to cool before transferring to a jar. Optionally, strain for a smooth texture.
