Ingredients:
- 1 cup (240 ml) water
- 1 cup (200 g) granulated sugar
- 1/2 cup (120 ml) rice vinegar
- 2 tablespoons (30 g) corn starch
- 2 tablespoons (30 ml) water (for slurry)
- 1-2 tablespoons (15-30 g) red chili flakes (adjust for spice preference)
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) soy sauce
- 1 tablespoon (15 g) fresh lime juice
Instructions:
- In a medium saucepan, combine water, granulated sugar, and rice vinegar.
- Place the saucepan over medium heat and stir until the sugar dissolves completely.
- In a small bowl, mix corn starch and 2 tablespoons of water to create a slurry.
- Stir minced garlic, red chili flakes, and soy sauce into the saucepan.
- Bring to a gentle boil, then gradually add the slurry, stirring constantly until the sauce thickens (about 2-3 minutes).
- Remove from heat and stir in lime juice.
- Allow the sauce to cool before transferring to a jar. Optionally, strain for a smooth texture.
