Ingredients:
- 1 ½ cups (190g) all-purpose flour, plus more for dusting
- ½ cup (113g) unsalted butter, cold and cubed
- ¼ cup (50g) granulated sugar
- ¼ teaspoon salt
- 2-3 tablespoons ice water
- 1 ½ cups (300g) granulated sugar
- ¼ cup (30g) all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 4 large eggs
- ½ cup (120ml) freshly squeezed lemon juice
- 2 tablespoons lemon zest
- ½ cup (65g) all-purpose flour
- ¼ cup (50g) granulated sugar
- ¼ cup (57g) unsalted butter, cold and cubed
- Powdered sugar
Instructions:
- Combine flour, sugar, and salt in a food processor or mixing bowl. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough just comes together. Press the dough into the prepared baking pan. Dock the crust with a fork. Chill the crust for 30 minutes.
- Bake the chilled crust until lightly golden brown.
- Whisk together sugar, flour, baking powder, and salt. In a separate bowl, whisk eggs, lemon juice, and lemon zest. Gradually whisk the wet ingredients into the dry ingredients.
- Combine flour and sugar in a bowl. Cut in the cold butter until it resembles course crumbs.
- Pour the lemon filling over the pre-baked crust. Sprinkle the crumb topping over the lemon filling. Bake until the filling is set and the topping is lightly golden brown.
- Let the bars cool completely in the pan. Dust with powdered sugar (optional). Cut into squares and serve.
