Ingredients:
- 1.5 lbs ground beef (85/15 blend)
- 1 tsp smash burger seasoning
- 1 tbsp avocado oil
- 1/2 cup Greek yogurt
- 1 tbsp tomato paste
- 1 tbsp apple cider vinegar
- 2 tbsp finely diced dill pickles
- 1/2 tsp smoked paprika
- 4 brioche buns
- 4 slices sharp cheddar cheese
- 1 medium yellow onion, thinly sliced
- 4 leaves butter lettuce
- 4 slices tomato
Instructions:
- Divide the beef into 4 equal portions and gently roll them into loose balls without packing them tightly.
- In a small bowl, whisk together Greek yogurt, tomato paste, apple cider vinegar, diced pickles, and smoked paprika.
- Preheat the Blackstone griddle to medium-high heat until the surface is shimmering hot.
- Place the beef balls on the oiled griddle, cover with parchment paper, and press down firmly with a burger press for 10 seconds until thin.
- Generously apply smash burger seasoning to the top of the searing patties.
- Once a dark brown crust forms (about 2-3 minutes), flip the patties using a bench scraper.
- Place a slice of cheese on each patty and cook for another 60-90 seconds until melted.
- Toast the buns face-down on the griddle in the rendered beef fat until golden brown.
- Assemble burgers by placing the patty on the toasted bun and topping with house sauce, sautéed onions, lettuce, and tomato.
