Ingredients:

  • 1.5 lbs ground beef (85/15 blend)
  • 1 tsp smash burger seasoning
  • 1 tbsp avocado oil
  • 1/2 cup Greek yogurt
  • 1 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 2 tbsp finely diced dill pickles
  • 1/2 tsp smoked paprika
  • 4 brioche buns
  • 4 slices sharp cheddar cheese
  • 1 medium yellow onion, thinly sliced
  • 4 leaves butter lettuce
  • 4 slices tomato

Instructions:

  1. Divide the beef into 4 equal portions and gently roll them into loose balls without packing them tightly.
  2. In a small bowl, whisk together Greek yogurt, tomato paste, apple cider vinegar, diced pickles, and smoked paprika.
  3. Preheat the Blackstone griddle to medium-high heat until the surface is shimmering hot.
  4. Place the beef balls on the oiled griddle, cover with parchment paper, and press down firmly with a burger press for 10 seconds until thin.
  5. Generously apply smash burger seasoning to the top of the searing patties.
  6. Once a dark brown crust forms (about 2-3 minutes), flip the patties using a bench scraper.
  7. Place a slice of cheese on each patty and cook for another 60-90 seconds until melted.
  8. Toast the buns face-down on the griddle in the rendered beef fat until golden brown.
  9. Assemble burgers by placing the patty on the toasted bun and topping with house sauce, sautéed onions, lettuce, and tomato.
