Ingredients:

  • 2 cups (280g) All-Purpose Flour
  • 1 cup (120g) Cake Flour
  • 1 tsp Baking Soda
  • 1.5 tsp Cornstarch
  • 1 tsp Sea Salt
  • 1 cup (225g) Cold Unsalted Butter, cubed
  • 0.75 cup (150g) Light Brown Sugar
  • 0.5 cup (100g) Granulated Sugar
  • 2 Large Eggs, cold
  • 1 tsp Pure Vanilla Extract
  • 2 cups High-Quality Semi-Sweet Chocolate Chips

Instructions:

  1. Place the cold, cubed butter and both sugars into the bowl of your stand mixer. Beat on medium-high for 3-4 minutes until a pale, sandy texture is achieved.
  2. Add the eggs one at a time, followed by the vanilla, mixing only until just combined.
  3. Turn the mixer to the lowest setting and slowly add the dry ingredients (flours, baking soda, cornstarch, and salt). Stop immediately when flour streaks disappear.
  4. Fold in the chocolate chips by hand.
  5. Divide dough into 10 massive balls, roughly 6 ounces each. Do not smooth the surface. Place on a tray and chill in the fridge for at least 2 hours.
  6. Preheat oven to 400°F (204°C). Bake for 10–12 minutes until the tops are barely golden.
