Ingredients:
- 2 cups (280g) All-Purpose Flour
- 1 cup (120g) Cake Flour
- 1 tsp Baking Soda
- 1.5 tsp Cornstarch
- 1 tsp Sea Salt
- 1 cup (225g) Cold Unsalted Butter, cubed
- 0.75 cup (150g) Light Brown Sugar
- 0.5 cup (100g) Granulated Sugar
- 2 Large Eggs, cold
- 1 tsp Pure Vanilla Extract
- 2 cups High-Quality Semi-Sweet Chocolate Chips
Instructions:
- Place the cold, cubed butter and both sugars into the bowl of your stand mixer. Beat on medium-high for 3-4 minutes until a pale, sandy texture is achieved.
- Add the eggs one at a time, followed by the vanilla, mixing only until just combined.
- Turn the mixer to the lowest setting and slowly add the dry ingredients (flours, baking soda, cornstarch, and salt). Stop immediately when flour streaks disappear.
- Fold in the chocolate chips by hand.
- Divide dough into 10 massive balls, roughly 6 ounces each. Do not smooth the surface. Place on a tray and chill in the fridge for at least 2 hours.
- Preheat oven to 400°F (204°C). Bake for 10–12 minutes until the tops are barely golden.
