Ingredients:
- 2 (6 oz/170g each) trout fillets, skin on or off
- 2 tablespoons (30ml) olive oil
- 1 lemon, zested and juiced (about 2 tablespoons juice)
- 2 cloves garlic, minced
- 2 tablespoons (loosely packed) fresh herbs, chopped (parsley, dill, thyme, or a mix)
- 1 tablespoon (15g) butter, melted
- Salt and freshly ground black pepper to taste
- Optional garnish: lemon slices, fresh herbs
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped herbs, melted butter, salt, and pepper. Whisk to combine.
- Place trout fillets on the baking sheet. Pour the herb marinade over the fillets, ensuring they are evenly coated.
- Bake for 15-20 minutes, or until the trout is opaque and flakes easily with a fork.
- The internal temperature should reach 145°F (63°C).
- Garnish with lemon slices and fresh herbs (if desired). Serve immediately.
