Ingredients:

  • 2 (6 oz/170g each) trout fillets, skin on or off
  • 2 tablespoons (30ml) olive oil
  • 1 lemon, zested and juiced (about 2 tablespoons juice)
  • 2 cloves garlic, minced
  • 2 tablespoons (loosely packed) fresh herbs, chopped (parsley, dill, thyme, or a mix)
  • 1 tablespoon (15g) butter, melted
  • Salt and freshly ground black pepper to taste
  • Optional garnish: lemon slices, fresh herbs

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped herbs, melted butter, salt, and pepper. Whisk to combine.
  3. Place trout fillets on the baking sheet. Pour the herb marinade over the fillets, ensuring they are evenly coated.
  4. Bake for 15-20 minutes, or until the trout is opaque and flakes easily with a fork.
  5. The internal temperature should reach 145°F (63°C).
  6. Garnish with lemon slices and fresh herbs (if desired). Serve immediately.
