Ingredients:
- 7 boneless skinless chicken thighs
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 1 tsp kosher salt
- 0.5 tsp cracked black pepper
- 0.5 cup low-sodium chicken broth
- 2 tbsp soy sauce
- 1 tbsp honey
- 3 cloves garlic, smashed
Instructions:
- Pat the chicken thighs completely dry with paper towels. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and pepper.
- Apply the spice rub generously to all sides of the chicken, pressing it into the meat to ensure it adheres.
- Optional: Heat olive oil in a large skillet over medium-high heat. Sear the thighs for 3 minutes per side until golden brown to enhance depth of flavor.
- Place the smashed garlic cloves at the bottom of the slow cooker. Arrange the chicken thighs on top in a single layer.
- Whisk together the chicken broth, soy sauce, and honey. Pour the liquid around the chicken (not over it) to keep the seasoning rub intact.
- Cover and cook on 'Low' for 4 hours, until the internal temperature reaches 165°F.
