Ingredients:

  • 7 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 0.5 cup low-sodium chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 3 cloves garlic, smashed

Instructions:

  1. Pat the chicken thighs completely dry with paper towels. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Apply the spice rub generously to all sides of the chicken, pressing it into the meat to ensure it adheres.
  3. Optional: Heat olive oil in a large skillet over medium-high heat. Sear the thighs for 3 minutes per side until golden brown to enhance depth of flavor.
  4. Place the smashed garlic cloves at the bottom of the slow cooker. Arrange the chicken thighs on top in a single layer.
  5. Whisk together the chicken broth, soy sauce, and honey. Pour the liquid around the chicken (not over it) to keep the seasoning rub intact.
  6. Cover and cook on 'Low' for 4 hours, until the internal temperature reaches 165°F.
