Ingredients:
- 1 package (3 oz) Jell-O Gelatin Dessert Mix
- 1 cup boiling water
- 1 cup heavy whipping cream, chilled
- 0.5 cup cold water
- 0.5 cup fresh berries
- 1 sprig fresh mint
Instructions:
- Dissolve the Jell-O mix in 1 cup of boiling water, whisking for 2 minutes until no granules remain. Stir in 1/2 cup of cold water and let sit until it reaches a syrupy consistency.
- In a separate chilled bowl, beat the heavy whipping cream until stiff peaks form.
- Gradually and gently fold the whipped cream into the syrupy Jell-O mixture using a silicone spatula until the color is uniform.
- Spoon the mixture into 6 individual dessert glasses. Tap lightly to remove air pockets.
- Refrigerate for at least 2 hours until firm. Garnish with fresh berries and mint before serving.
